ACFF Educational Assurance
Quality Endorsed Culinary and Culinary Management Programs
The American Culinary Federation Foundation's (ACFF) Educational Assurance program is designed to give non-degree granting culinary programs, offering less than the minimal 1,000 hours for ACFF accreditation, the opportunity to become recognized by ACFF.
By becoming ACFF educationally assured, short-term programs at schools, colleges and other educational entities can brand their course of study with the ACFF logo and name.
Programs that qualify include specialized or single subject programs such as cake decorating or pulled sugar training programs, existing ACF accredited programs that offer certificate and/or diploma programs, formalized demonstration classes and online educational programs. Military training programs, including academic and apprenticeship training, also qualify.
Programs must follow policies and procedures similar to the ACFF accreditation process, but in an abbreviated general format, and instructors must submit an application with supporting documents to the ACF national office. The supporting documentation would include a program mission statement, description of student levels and curriculum details, such as lesson plans and syllabi. Schools also submit a description of teaching methods, an analysis of academic and/or laboratory related hours, instructor profiles and facility descriptions.
Submitted documents will then be reviewed by ACF staff, and up to two ACF certified chefs and/or culinary educators will determine the education value for the particular program. After preliminary review, a site visit will occur to determine that the education described is being properly delivered. Education Assurance Programs are automatically accepted as approved continuing education centers and give credit toward ACF certification.
The program is also open to any international non-degree culinary
programs that market to American students. For more information on
