The 2007 Northeastern Regional Conference

Celebrating 30 Years of Apprenticeship - Chef Metz to deliver Keynote
in Pittsburgh - 2007 marks the 30th anniversary of the first
graduating class of the American Culinary Federation Apprenticeship
Program. To mark this special occasion, Ferdinand E. Metz, CMC, AAC,
HOF, who was instrumental in establishing the Chefs' Apprenticeship
program, as well as the Chefs' Certification and the Master Chefs'
Certification Programs, will deliver the keynote address during the
conference General Session. Metz will reflect on the early days before
the ACF Apprenticeship Program, why it was necessary, how it changed the
face of the culinary industry and where he sees the program in the
future.

Cooking With Beer - This year's event will celebrate A Taste of
Wisconsin. The Food Show will pay tribute to Milwaukee's rich German
heritage complete with a traditional Biergarten. Leinenkugel, a favorite
regional brewery, will have a strong presence in the tradeshow and at
the General Session. Dick Leinenkugel, vice president of Sales and
Marketing of The Jacob Leinenkugel Brewing Company will join David
Russell, CEC, AAC, for some lively discussion and a cooking
demonstration during his "Cooking Today" segment. The details are still
"brewing" so stay tuned.
Culinary Institutions Receive ACFF Educational Assurance
Award
Chez Boucher Professional Cooking School in Greenland, N.H., and the

earned the American Culinary Federation Foundation (ACFF) Educational
Assurance endorsement for planning and delivering quality culinary art
educational programs.

ACF Chef & Child Foundation Accepting Applications for Little
Oscar Award
The ACF Chef & Child Foundation (CCF) Little Oscar award recognizes
those ACF chapters that put forward an exceptional effort to advancing
the mission of the ACF Chef & Child Foundation in its fight against
childhood hunger and obesity.
The deadline for submitting applications is January 15, and
applications may be downloaded from the ACF's Web site at www.acfchefs.org/Content/ACFPrograms/ChefandChild/Awards/Awards.htm
or by calling (800) 624-9458. The national Little Oscar award winner
will be selected from among the four regional winners at the ACF
National Convention.
