Chefs de Cuisine Association of St. Louis Inc. Wins Baron H. Galand Culinary Knowledge Bowl at 2008 ACF National Convention

St. Augustine, Fla., July 17, 2008 - Five American Culinary Federation (ACF) student culinarian members from Chefs de Cuisine Association of St. Louis Inc., took first place in the Baron H. Galand Culinary Knowledge Bowl, sponsored by Pearson Prentice Hall, at the 2008 ACF National Convention in Las Vegas, July 14-17.

The Chefs de Cuisine Association of St. Louis Inc. team representing the ACF Central region comprises: Mary Boehne; Charles Conners, Brian Horton, Reagan Irwin and Corey Moore, all of St. Louis. Joseph Mueller, CEC, was the team's coach.

The Baron H. Galand Culinary Knowledge Bowl competition was open to student culinary teams from ACF chapters, apprenticeship programs and accredited schools. Twenty eight teams competed in ACF's four regional conferences. The team competed for the national title against three other ACF regional teams at the convention. Competition questions were developed from five nationally published textbooks for culinary professionals that cover topics such as nutrition, safety and sanitation, and the art of modern cooking. The tournament was formatted using a "Jeopardy"-style, five-by-four matrix board for games leading to the final round, and a five-by-five matrix board for the final round.

The competition, Baron H. Galand Culinary Knowledge Bowl, was named in honor of past ACF National President Baron H. Galand, CEC, AAC, HOF, who championed the junior members and encouraged them to get involved in their profession outside their kitchens.

Chosen for its fine cuisine and world-famous entertainment, Las Vegas was the location of the 2008 ACF National Convention. Bringing more than 2,000 chefs, cooks and foodservice professionals to the city, the convention provided attendees with numerous opportunities to advance their professional development and enhance their culinary skills through informative workshops and seminars, cutting-edge demonstrations, a trade show featuring approximately 150 exhibitors, national competitions and national-award presentations. The sold-out third annual Certified Master Chefs dinner featured ACF Culinary Team USA.
