ACF Members Earn Recognition at U.S. Pastry Competition in New
York
St. Augustine, Fla., March 19,
2009—Two American Culinary Federation (ACF) members earned
top prizes at the 20th annual U.S. Pastry Competition held in
conjunction with the International Restaurant and Foodservice Show of
New York at the Jacob K. Javits Convention Center, New York, March 1.
Andrew Chlebana, CEPC, pastry chef at White Eagle Golf Club in
Naperville, Ill., won third place, a bronze medal and $1,000, and Naomi
Gallego, executive pastry chef at the Four Seasons Hotel Austin, Austin,
Texas, earned honorable mention, $750 and a trophy in the competition
themed “Give My Regards to Broadway.”
“I am very happy to have finished as well as I did, and to have
another ACF member on the podium at the end of the show was even more
rewarding,” said Chlebana, ACF’s reigning Pastry Chef of the
Year for 2008.
A member of ACF Louis Joliet Chapter, Chlebana’s showpiece,
“Homage to Broadway,” paid tribute to the sites and sounds
of Broadway and the great shows it has been home to, rather than
focusing on a specific show. It was a devastating blow when his
showpiece fell, but even with that unexpected turn, he still earned a
spot in the top three out of 15 competitors. His cake was a tropical
caramel chocolate cake. A member of Texas Chefs Association,
Gallego’s showpiece was entitled “Wicked,” and her
cake, “Poppy Fields,” combined chocolate, cardamom and
Mandarin orange-almond.
In addition, Stephen Evetts, executive pastry chef at New York
Marriott Marquis, New York, a member of ICA-ACF Big Apple Chapter, was
on the jury’s artistic-technical showpiece panel. Stephen Durfee,
CEPC, pastry chef-instructor at The Culinary Institute of America at
Greystone, St. Helena, Calif., a member of ACF National Chapter, also
competed.
