John Minniti, CEC, AAC, HBOT, Receives Prestigious Chair’s Medal from the American Academy of Chefs

St. Augustine, Fla., July 16, 2009—The American Academy of Chefs (AAC), the honor society of the American Culinary Federation (ACF), honored John Minniti, certified executive chef (CEC), American Academy of Chefs (AAC), honorary board of trustees (HBOT), of Treasure Island, Fla., with the Chair’s Medal. Minniti received the award during a formal ceremony and dinner at the 2009 ACF National Convention held at the Orlando World Center Marriott, Orlando, Fla., July 10.

The Chair’s Medal is presented annually to an AAC Fellow who has demonstrated exemplary dedication and made outstanding contributions to the culinary profession. This individual has also maintained the highest standards and ideals of the AAC and has significantly and positively worked to ensure excellence among future culinarians.

Minniti has been a mentor to countless culinarians and professional chefs throughout his distinguished career as a chef and educator. He began his culinary career in 1976 as a chef at Merion Caterers in Cinnaminson, N.J. In 1981, he became chef-owner of Pheasant Run Grill in Cinnaminson. While running the restaurant, Minniti earned his Master of Education degree from Antioch University, Philadelphia. He spent the next 35 years working as the culinary-arts coordinator at Cinnaminson High School, where he created a culinary program that became a model for the state of New Jersey and earned him the Teacher of the Year award. Upon retiring from the academic arena, Minniti returned to his roots and became chef/owner of Bàcio Italian Cuisine in Cinnaminson in 2005, until he retired in 2007.

Minniti has been a member of ACF Professional Chefs Association of South Jersey since 1977 and has earned many awards throughout his career. He is a member of the Chaîne des Rôtisseurs, the Honorable Order of the Golden Toque, Epicurean World Master Chefs Society and honorary member of the Escoffier Society. He has served as AAC Northeast Region Chair, American Academy of Chefs (AAC) national vice chair and was elected as AAC chair in 2003. Minniti is currently AAC Ambassador.

The AAC, which recognizes those individuals who have made significant contributions to both the culinary profession and ACF, was established in 1955 at the ACF National Convention in Pittsburgh. Those credited with its founding include the legendary Pierre Berard, Peter Berrini and Paul Laesecke, HOF, AAC.
