The award recognizes an outstanding culinarian who is at least a 25-year ACF and AAC member, an ACF-certified executive chef or higher, and is at least 62 years old. Urban’s career began in the 1950s as a pastry chef in his native Switzerland and included a tour of duty as a chef in the Swiss army. He worked in Finland, then Canada, and eventually made the U.S. his home. He has been an executive chef for several decades in fine-dining establishments.
