Despite the cold weather, Barbeque & All That
Jazz turned out to be a smokin' hot time. Barbeque was the theme
for this year's conference and for the first time ever, the Central
Regional Conference, in cooperation with the Kansas City Barbeque
Society, hosted a BBQ Challenge, sponsored by Tyson Food Service.
We also received great media coverage of the 2008 ACF Central
Regional BBQ Challenge.
Congratulations to all the 2008
Central Regional Conference award winners. I wish you luck in the
pursuit of the National title, we're rooting for you!
Programming for this year's conference was both informative and
entertaining. Barbeque was the focus for general session and included a
Bar-B-Q&A with award winning competitors Ray Lampe and Richard
McPeake, Executive Director of Kansas City Barbeque Society, Carolyn
Wells and co-host Jim Murray, CEC, CBJ.
Other notable educational programming
included:
- Flavor Dynamics of Beef & the Modern
Menu
Sponsored by: Beef Industry Councils
Chef Lars Kronmark of CIA-Graystone led this informative presentation
which included an explanation of the umami effect and other flavor
pairings designed to take menus from ordinary to cutting-edge.
- Global Flavors and Your Menu
Sponsored by: Unilever Foodsolutions
Unilever Foodsolutions' Corporate Executive Chef, Steve Jilleba, CMC,
CCE, AAC and Corporate Chef Rudy Smith, CEC, prepared authentic dishes
from Singapore and Istanbul while presenting an exciting array of
ingredients and spices that tantalized the culinary imagination.
If you forgot to bring your camera, don't worry. We have posted all
the conference pictures online. View the 2008 Conference Photos.
