ACF Culinary Team USA
The American Culinary Federation, Inc. (ACF), the largest group of
professional culinarians in America for more than 80 years, is home to
the official U.S. team for national and international culinary
competitions—ACF Culinary Team USA. The U.S. representation
comprises a national team, a military team, and a youth team. Each team
will represent the United States at the 2012 Internationale Kochkunst Ausstellung (IKA)
International Culinary Exhibition, also known as the “culinary
Olympics,” in Erfurt, Germany.
The Journey Has Begun!
National Team
Twenty-six applicants began their journey to be a part of the
national team in Elgin, Ill. from Feb. 19–21 with the cold-food
tryouts. This event was graciously hosted by Elgin Community
College under the coordination of Chef Jill Russell, CEC, CCE. The
candidates had a total of 17 hours to prepare, plate and present their
dishes according to the guidelines.

Meet
the chefs advancing to the hot-food tryouts April 10th at Elgin
Community College. In the end, only six team members and two alternates
will be chosen to represent the United States and American cuisine in
the international arena as part of ACF Culinary Team USA. Hot-Food

Military Team
The U.S. Army Culinary Arts Team (USACAT) is the U.S. National
Military Culinary Team and has been competing in the
“culinary” Olympics since 1976. Competing at local, national
and international culinary competitions offers the military chefs the
opportunity to sharpen and broaden his or her cooking skills. More

Youth Team
Apply now
for the youth team. What you and your team will learn with this
experience can’t be taught in a classroom. Deadline: May 31, 2010. Youth team tryouts will be
held at the 2010 ACF
National Convention, August 2–5, in Anaheim, Calif.
