ACF Culinary Team USA ACF Culinary Team USA

The American Culinary Federation, Inc. (ACF), the largest group of professional culinarians in America for more than 80 years, is home to the official U.S. team for national and international culinary competitions—ACF Culinary Team USA. The U.S. representation comprises a national team, a military team, and a youth team. Each team will represent the United States at the 2012 Internationale Kochkunst Ausstellung (IKA) International Culinary Exhibition, also known as the “culinary Olympics,” in Erfurt, Germany.

The Journey Has Begun!

National Team

The National Team held its first practice session on June 7–9 at Johnson & Wales University (JWU) in Charlotte, N.C. The assignment was cold-food exhibition, and each team member had two or three dishes and/or platters to prepare, based on the requirements and guidelines for the Culinary World Cup. Also at the practice session were team advisor Keith Keogh, CEC, AAC, and coaches Joachim Buchner, CMC, Patricia Nash and Gilles Renusson. After an intense two days of preparation and working with the coaches, the chefs were critiqued and took home advice to work on for the next practice session at JWU in Providence, R.I., July 19–21. A huge thank you to Mark Allison, dean of culinary education, and Ashley McGee, CEC, educator, at the JWU Charlotte campus for so graciously hosting the practice. The Team would also like to thank Geoffrey Blount, CEPC, executive pastry chef at Central Piedmont Community College in Charlotte, and Kimberly Stoll, a student at the school, for taking care of the Team’s transportation needs. George Gonzalez, a finalist in the national team tryouts, traveled at his own expense to the practice session to assist and to learn from team. His dedication and support to the Team is greatly appreciated.

ACF Culinary Team USA will represent the United States at the Culinary World Cup in Luxembourg this November and at the 2012 International Culinary Art Exhibition.

Youth Team

Join us at the 2010 ACF National Convention as these student teams compete for a chance to represent the United States as ACF Culinary Youth Team USA:

  • ACF Professional Chefs and Culinarians of the Heartland
  • ACF Bay Area Chefs Association of Oregon

Military Team

The U.S. Army Culinary Arts Team (USACAT) is the U.S. National Military Culinary Team and has been competing in the “culinary” Olympics since 1976. Competing at local, national and international culinary competitions offers the military chefs the opportunity to sharpen and broaden his or her cooking skills.
