Program Types

There are 4 types of programs available to the ACFEF apprentice depending on the program chosen. Ten concentration areas will be covered over the course of the apprenticeship with sustainability in the food service industry included within each station.

Steward
Breakfast
Vegetable, Starch & Pasta
Fabrication
Broiler / Char-grill
Soup & Sauce
Pantry & Cold Foods
Cooking Techniques
Baking & Pastry
Supervisory Development

2-Year Program - A 4,000 hour hands-on in a kitchen program that encompasses 150 logbook entries approved by a supervising chef at your assigned facility. 445 related instruction hours covering the 10 concentration areas are required also.

3-Year Program - A 6,000 hour hands-on in a kitchen program that encompasses 150 logbook entries approved by a supervising chef at your assigned facility. 445 related instruction hours covering the 10 concentration areas are required also.

Hybrid Program - A combination of a time based model and a proficiency based model that will allow the apprentice to complete the program between 4,000 hours up to 6,000 hours on the apprenticeship portal.

Culinary Skills Fundamentals Program - A 1,000 hour or more educational and hands-on training program covering basic skills needed to begin a culinary career.
