The ACFEF Apprenticeship Program recently partnered with American Technical
Publishers to create 10 Apprenticeship Training Modules. The series
of 10 modules represents the 10 apprenticeship stations: Baking &
Pastry; Breakfast; Broiler/Char-Grill; Cooking Techniques; Fabrication;
Pantry & Cold Food; Soup & Sauce; Steward; Supervisory
Development; and Vegetable, Starch & Pasta.
Each module includes several features to make learning easier, from
production tips to procedures to interactive media clip icons.
Step-by-step photos, key terms and checkpoints help learners understand
the key components of each station. In addition, QR codes that link to
Internet resources are included throughout each module.
The interactive CD-ROM is a self-study aid that reinforces each
module's content. The CD is Windows™ compatible. Some of the
special features on the CD include flash cards, media clips,
checkpoints, culinary math applications, and technique videos.
