Chapter News and InformationChefs, Associates and Fellow Colleagues:Who doesn’t love this time of the year! This region is once again green and lush. In our local gardens perennial and annual plantings are thriving heralding the beginning of the summer produce season. Menus throughout the Finger Lakes Region of New York State are eagerly showcasing our seasons first arrivals giving them top billing. If you haven’t already, please support our local farmers and utilize the sustainable network available through www.fingerlakesculinarybounty.org. We are extremely lucky to have such a valuable organization that connects our areas food professionals to local farmers. We had a very educational meeting in May. Our host Steve Holzbaur from Finger Lakes Fresh in Ithaca spoke about hydroponics. They grow a variety of lettuce to include Boston and Leaf as well as Arugula and Basil. The company currently has two facilities and is expanding in the very near future. As I have stated on a number of occasions, the New York Wine Country Chefs Association exists for the membership, we are committed to growing and improving our organization to meet and exceed the expectations of today’s food professionals. But, to be fully successful in this pursuit, we need your input, your assistance and your support in every step of the way. Unfortunately our hectic schedules have made our June meeting obsolete, we will resume in July. I will send out notification along with the July newsletter in a few short weeks. In August, we will be holding our first annual Summer BBQ/Picnic. I am in search of a member or two to oversee and organize this event. Please feel free to contact me to discuss details. Thank you, Thomas F. Leonard, CEC President leonardtf@corning.com We look forward to seeing you there! “A Bearnaise sauce is simply an egg yolk, a shallot, a little tarragon vinegar, and butter, but it takes years of practice for the result to be perfect.” A little about us..... The ACF NY Wine Country Chefs chapter was founded the summer of 2003. Our goal is to become an important part of the Finger Lakes community, by becoming involved in networking, fundraising, community outreach and other activities. We have a diverse membership including 2 Certified Executive Chefs. Our goals include, assisting our members so that they may achieve certification at whatever level they are working towards, creating a resource center that will assist our members when they find themselves in need of staff, purveyors or any other last minute needs. Building a culinary library where we can share all types of culinary materials. Earlier this year we have had Cornell University certified as a place to hold certification practial testing. Our meetings offer you the chance to network with other chefs in the area. At meetings we also have an educational section, so there is opportunity to grow in your profession and for you to help educate others as well. You have the opportunity to become part of something very special, exciting and fun. For more information about our chapter please check out our website at www.nywinecountrychefs.com |
